Pitta Nachos Recipe

 

Ingredients

 

spring onion - 1, chopped

can corn kernels - 130g

low-fat cheese - 1/4 cup, grated

wholemeal pitta bread - 1

small tomato - 1, chopped

 

Method

 

Preheat oven to 180˚C.

Split pitta bread to half and cut into triangle sizes. Cook pitta in oven for 7 minutes until crunchy. Cool.

Drain the corn kernels, rinse under running water for a while.

Mix the corn, tomato and spring onion together in a bowl.

Preheat griller, arrange the pitta on the buttered plate, sprinkle grated cheese over.

Grill the pitta until cheese melted. Pour the tomato mixture onto center of pitta.

Serve hot.
