This is a delicious dip with a sweet and
spicy flavor. Serve wheat crackers or fiery tortilla chips as
accompaniments for dipping.
Ingredients

carrot - 4

hot curry paste - 1 tbsp

a handful of fresh basil leaves

onion - 1

oranges - 2, juices and grated rind

natural yogurt - 150ml

fresh lemon juice - 2 tbsp

red Tabasco sauce - to taste

ground black pepper and salt
Method

Chop the onion, peel and grate the
carrots. Put the carrots, onion, curry paste, orange rind and
juice in a small saucepan.

Bring to the boil, cover and
simmer gently for 12 minutes.

Then, process the mixture in a
blender until smooth. Leave to cool completely.

Stir in the yogurt, tear the basil
leaves roughly into small pieces and stir them into the carrot
mixture.

Finally, add the lemon juice and
Tabasco. Season with pepper and salt. Garnish with extra grated
carrot and serve with wheat crackers or fiery tortilla chips.
