Spiced Carrot Dip Recipe

This is a delicious dip with a sweet and spicy flavor. Serve wheat crackers or fiery tortilla chips as accompaniments for dipping.

 

Ingredients

  • carrot - 4

  • hot curry paste - 1 tbsp

  • a handful of fresh basil leaves

  • onion - 1

  • oranges - 2, juices and grated rind

  • natural yogurt - 150ml

  • fresh lemon juice - 2 tbsp

  • red Tabasco sauce - to taste

  • ground black pepper and salt

Method

  • Chop the onion, peel and grate the carrots. Put the carrots, onion, curry paste, orange rind and juice in a small saucepan.

  • Bring to the boil, cover and simmer gently for 12 minutes.

  • Then, process the mixture in a blender until smooth. Leave to cool completely.

  • Stir in the yogurt, tear the basil leaves roughly into small pieces and stir them into the carrot mixture.

  • Finally, add the lemon juice and Tabasco. Season with pepper and salt. Garnish with extra grated carrot and serve with wheat crackers or fiery tortilla chips. Serve 5.
