Bacon In Leek Soup Recipe

Ingredients (serves six)

  • 800 grams of  1 unsmoked bacon

  • 500 grams of leek (thickly sliced the white portion and finely chopped the green portion)

  • 1 large carrot (peeled and chopped finely)

  • 1 large potato (peeled and sliced)

  • 15 ml medium oatmeal

  • 1.5 liters of water

  • handful of fresh parsley (chopped finely)

  • salt and pepper to taste

Method

  • Scald bacon in boiling water for 3 minutes then transfer to a deep sauce pot with 1.5 liters of boiling water and simmer with low heat for 30 minutes.

  • Add thickly sliced leeks, carrot, potato and oatmeal to the soup and continue to simmer further for 40 minutes until bacon and vegetables are soft.

  • Dish out the bacon and cut into serving sizes to serve.

  • Bring soup to a light boil and adjust seasoning to taste then add finely chopped green leeks and parsley before serving.
