Cucumber Soup with Yogurt Recipe

The mix of cucumber and yogurt makes perfect combination that give a refreshing cold soup for the lunch on a hot day.

 

Ingredients (serves six)

  • 1 cucumber (peeled and diced)

  • 75 grams walnut pieces

  • 3 cloves garlic

  • 50 grams old bread (torn into pieces)

  • 400 ml plain yogurt

  • 30 ml sunflower oil

  • 25 ml olive oil

  • 120 ml cold water

  • 1 tablespoon lemon juice

  • salt to taste

  • sprigs or fresh dill for garnish

Method

  • Add garlic, bread, walnuts and little bit of salt into a blender, blend until the mixture is smooth then add the sunflower oil and combine well.

  • Transfer the mixture into a large bowl and beat in the yogurt. Fold in the diced cucumber , then add the cold water and lemon juice to taste.

  • Pour the soup into a large chilled bowls, drizzle with olive oil and garnish with chopped walnuts and sprigs. Serve cold.
