A delicious and nutritious soup, ideal
for warming those chilly winter evenings.
Ingredients
Method

Put the onion, potatoes, leek, bay
leaf and stock in a pan and mix together. Cover, bring to boil
and simmer for 15 minutes, stirring.

Add the broccoli and peas, cover,
return to the boil and simmer for 10 minutes more, stirring
occasionally.

Set aside to cool. Remove and
discard the bay leaf. Puree in a blender until smooth.

Add the parsley, season with
pepper and salt, process briefly. Return the puree into the pan
and reheat until very hot. Ladle into soup bowl and garnish with
parsley leaves. Serves 6.
