Spiced Cauliflower Soup Recipe

This easy to made yet delicious vegetable soup is perfect as a light meal. Serve warm with bread and garnish with fresh coriander.

 

Ingredients (serves four)

  • 800 ml of milk

  • 250 grams of cauliflower (cut into florets)

  • 15 ml of garam masala

  • salt and pepper to taste

  • fresh coriander (chopped) for garnish

Method

  • Add milk, cauliflower and garam masala in a sauce pot and bring to a gently boil. Cover the pot and let it simmer for 20 minutes with low heat until cauliflower is soft.

  • Leave it to cool then process with a blender to smoothen the puree.

  • Return the puree to the pot and reheat without boiling. Adjust seasoning to taste and serve warm.
